The software does not care what the currency is; it just uses numbers. You have an option to specify the currency symbol to use; this sets the symbol globally. The symbol is not stored with the transaction.
So, the answer to your question is "yes and no".
You could set the symbol you want, then generate any and all reports that are appropriate for that currency symbol. You could then change the symbol, generate more reports, and etc.
Any reports you generated that crossed currency boundaries (for instance, an aggregate report across several european countries denominated in the local currency and not the euro) would not be right, based on the need to report out in more than one symbol. Of course, if you do that you have currency conversion issues as well.
